What is NMR spectroscopy?
NMR spectroscopy has been used for structure analysis of pure compounds over decades. NMR spectroscopy (i.e., SNIF-NMR) has been adopted by the Organisation Internationale de la Vigne et du vin and the European Union as an official method for wine analysis.
In the last years, NMR spectroscopy has showed to be a general tool to analyze complex mixtures offering unique screening capabilities for a complete characterization of the wine molecular profile.
NMR spectroscopy is a particularly powerful approach when applied to the high-throughput analysis of wine. NMR spectroscopy has been confirmed to be a straightforward and useful technique for the simultaneous identification and absolute quantification analysis of a wide range of substances, including low-molecular-weight molecules such as polyphenols.
NMR spectroscopy can easily detect smallest changes in concentrations of many components in the wine.
Our approach is absolute reproducibility and is not equaled by any other method currently used in food analysis. The advantage of our approach is the detection of peculiar information of the molecular profile of each wine by NMR spectroscopy.
